A butcher's shop works with sharp knives, raw meat and a cold chain that must not break for a single hour. If the cold room fails over the weekend, all the stock is lost; if listeria gets into the sausage, the business is liable for everyone who falls ill. Here is how to protect yourself against that, and what it costs.
The question almost everyone asks first
For the spoiled stock you need a chilled goods or spoilage add on, and for the broken unit you need machinery insurance. Standard contents insurance only pays if fire, lightning or a burst pipe caused the failure. Insurers often require a temperature alarm that texts your phone, and in a real emergency it can save half the stock.
One faulty compressor in the cold room, and sides of pork, sausages and marinated cuts worth several thousand euros can no longer legally be sold.
Salmonella in the mince, listeria in the cold cuts: if you make customers ill you pay medical costs, lost earnings and compensation, and when you supply a canteen that may be for many people at once.
A splinter of bone in a sausage or a chip of knife blade in the sliced meat leads to broken teeth and cuts inside the mouth.
Cuts are among the most frequent accidents at work in butchery, and for an owner without personal cover they mean weeks without income.
Meat loaf, schnitzel, meatballs: the lunchtime trade brings fryers and griddles into the shop, and with them the risk of fire.
At a wedding buffet, chafing dishes get knocked over, guests are scalded, or the cold chain in the van does not hold all the way to the table.
Compared with other trades, 1 low to 5 high.
Essential
Pays for food poisoning, foreign objects and falls in the shop, with products liability for your own sausages and your catering.
Strongly advised
Replaces counters, machinery and stock after fire, water, storm and burglary, and with the chilled goods add on also stock lost to a refrigeration fault.
Covers refrigeration units, smokehouse, bowl cutter and band saw against short circuits, operating errors and material failure.
Carries wages and running costs while the shop or production stays closed after a loss.
For the refrigerated van, the mobile shop and the catering van: motor liability is compulsory, and comprehensive cover protects the expensive refrigerated body.
Protects your income when hands, back or joints give up after years of working in cold and damp conditions.
Depends on the business
Extends the statutory accident cover to your staff's free time and helps when you are trying to recruit skilled butchers.
Turnover drives the liability premium, and the value of your refrigeration and machinery drives the property cover. Catering, a lunchtime counter or your own slaughtering raise the risk and therefore the premium.
| Insurance | Example | Typical range |
|---|---|---|
| Business liability | Butcher with one shop, turnover up to 100,000 euros | around 100 to 350 euros a year |
| Business liability | Butcher with catering, turnover around 250,000 euros | around 140 to 1,300 euros a year, depending on the insurer |
| Business contents | Shop, production and stock worth 150,000 euros, with chilled goods cover | around 500 to 1,200 euros a year |
| Machinery breakdown | Cold rooms, smokehouse and bowl cutter worth 80,000 euros | around 250 to 750 euros a year |
| Business interruption | Loss of income for up to twelve months | around 150 to 450 euros a year |
For comparison: Basic cover of liability and contents insurance with chilled goods costs about as much a year as 50 kilograms of minced beef from your own counter.
Guide figures excluding insurance tax, as of September 2026. The liability figures come from a public price comparison for butchers; property and machinery cover are guide figures from our own quoting practice. Your premium depends on turnover, equipment and any sideline business.

The cold room reads twelve degrees; the compressor failed during the night. Meat and sausages have to be thrown away.
The refrigeration unit is beyond repair and has to be replaced.
The fat in the lunchtime fryer ignites, and the counter and extractor hood are gutted.
After the fire the shop stays shut for two weeks. Wages and rent keep running, and the pre holiday trade is lost.
Twelve guests at a company party fall ill with salmonella after the catering buffet.
Parking at the weekly market, the mobile shop hits a stall and damages its goods and roof.
Which package would you have had?
Illustrative amounts before any excess. Whether and how much is paid depends on the policy terms.
Insurers ask very different premiums for the same butcher's shop. As a broker we set price and terms side by side for you, especially on chilled goods.
We settle boat insurance claims ourselves. That is why we know that after a refrigeration failure, the temperature log, service records and stock list decide how much you are paid.

Questions and answers
In public comparisons it starts at around 100 euros a year without an excess. With catering and higher turnover, quotes range from about 140 to 1,300 euros, depending on the insurer.
Not always. Catering, buffets at customers' premises and the mobile shop should be named in the policy so that your liability cover also applies away from the shop.
Only with a chilled goods or spoilage add on. Ask whether an outage on the public grid is included and after how many hours the policy pays.
Your liability policy with products liability, provided the harm is traced to your goods. Retained samples and cooling logs help to settle the case quickly.
It is strongly recommended. Refrigeration, bowl cutter and smokehouse are expensive, and a breakdown is not a fire claim. Without machinery insurance you bear the repair and the downtime yourself.
Through the BGN, the statutory accident insurer for the food trade, where registration is compulsory. Group accident insurance can extend the cover to their free time.
